I just remembered because of the occasional rain. My office mate made me listen to this song, and ever since, I sing it when I’m in the office and it’s raining outside, or when I just woke up and feel like staying at home because of the weather. Blanket weather, cuddle weather.
So here’s a really simple, delicious recipe for banana pancakes — so simple in fact that anyone can do this. It’s also a fantastic way of using up those over-ripe bananas you might have in stock.
Banana Pancakes
Serving: 12 pancakes
Ingredients:
- 125 g all-purpose flour
- 10 g white sugar
- 7 g baking powder
- 2 g salt
- 1 egg, beaten
- 235 ml milk
- 30 ml applesauce
- 2.5 ml vanilla extract
- 2 ripe bananas, mashed
- Combine flour, white sugar, baking powder and salt.
- In a separate bowl, mix together egg, milk, applesauce, vanilla extract, and ripe bananas.
- Pour the banana mixture into the flour mixture. Batter should be slightly lumpy.
- Cook in a pre-heated, lightly oiled frying pan. Use about 1/4 cup of batter for each pancake. Turn over to cook the other side.
- Serve hot.
If you want to make thinner pancakes, add half a cup of milk. Also, I’d suggest cooking the pancakes over low or medium heat so as to cook the insides of the pancakes. There’s also a new tip I’ve learned: you can mash the bananas in a ziplock bag. Seal the bananas inside and squeeze, and then you can cut off a corner to create a pour sprout.
There are also various additions you can make — a pinch of cinnamon, sliced almonds, toasted pecans, chocolate chips (hmm, chocolate chips always seem like a good idea). Serve with whipped cream, sliced bananas and strawberries or just maple syrup.
Serve with hot coffee for a perfect rainy morning.
Now I just need to have someone to sing the song to haha. Oh well.
