Baking with Coca Cola: Coca Cola Cupcakes

Even now I’m still amazed that coca cola can be used in recipes. Somehow, this seems to me even more fascinating than using beer. Actually I rarely drink Coke or other soft drinks (doctor’s orders), but when I found this Coca Cola cupcake recipe, I immediate thought, “wow, I must try that.”

I looked over at the list and there’s nothing fancy about the ingredients — you can easily find them in the pantry, and it’s not difficult to make either. If you’re knowledgeable in baking cupcakes this is just a cinch.

These cupcakes don’t have an all-Coca Cola flavour. Instead, these have a rich, chocolatey taste and just a hint of Coca Cola. Still, believe me when I say that this recipe is one of a kind.


 
 

Coca Cola Cupcake

Yield: 15 cupcakes

Ingredients:

Cupcake

  • 480 ml regular Coca Cola
  • 125 g unsweetened cocoa powder
  • 1 stick unsalted butter, cut into 1-inch pieces
  • 280 g granulated sugar
  • 120 g packed dark brown sugar
  • 220 g all-purpose flour
  • 1 1/4 tsp baking soda
  • 1 tsp salt
  • 2 large eggs

Frosting:

  • 125 g softened butter
  • 280 g icing sugar
  • Coke

 

  1. Preheat oven to 165 C.
  2. In a small saucepan, heat Coca Cola, cocoa powder and butter over medium heat until the butter is melted. Add the granulated and dark brown sugars and whisk until dissolved. Remove from heat and let cool.
  3. In a large bowl, mix together the flour, baking soda and salt.
  4. Beat the eggs in a separate bowl and whisk into the cooled cocoa mixture until blended. Gently fold in the flour mixture. Do not overbeat (batter should be slightly lumpy).
  5. Pour the batter into a greased cupcake tin and bake for 20 minutes. Rotate the pan halfway through the baking time. Transfer to a wire rack to cool.
  6. Frosting: In a bowl, add in butter and icing sugar. Add coke a little at a time until the frosting is creamy.
  7. Optional: top with a cherry.

 

I’ve read that Coca Cola cupcakes are also excellent with salted peanut butter frosting. Or try plain whipped cream, that works as well. I tried to stay true to the frosting recipe here, but I’ve also read other comments that using Cola syrup instead of the real thing for the frosting works better.

I didn’t have Cola syrup in hand when I decided to make this, but hopefully somebody out there had tried it and is kind enough to tell me how’d it go.
