Eggplant omelette is a staple in our house. I liked to make this when I was just starting in cooking because it’s so easy. In fact, I didn’t have a recipe then. Just grabbed Chinese eggplants and eggs and proceeded to cooking the dish.
Let me tell you, though, the first time I made this, I gave this to my best friend as lunch (this is the same best friend who gives me avocados). He thought it was terrific of me to cook something for him, seeing as he’s the one more knowledgeable in cooking and I’m the one who prefer doing the tasting and eating (…”therefore, I shall eat”).
I didn’t know you have to peel the skins off the eggplants haha, so I cooked it with the skins on (it’s a bit hard to notice because it’s been enveloped with the egg mixture). The joke’s on me though because he shared it to his classmate even before tasting it. He was, uh, like I said, proud, and when they took a bite they looked at each other — so yes, that’s embarrassing.
So here’s the perfected, fool-proof recipe for an easy and delicious eggplant omelette!
Eggplant Omelette
Ingredients
- 4 Chinese eggplants
- 3 eggs
- Salt and pepper, to taste
- 1 tsp vegetable oil
- Boil water and add the eggplants until fork tender. Another option is to roast them. Allow to cool.
- Using a knife, peel off the skins of the eggplant in long strips. Make sure that the stem remains attached.
- In a bowl, beat eggs. Season with salt and pepper.
- Place an eggplant into the batter and allow to soak. Make sure that the eggplant is liberally coated with the egg mixture. Repeat with the remaining eggplants.
- In a fry pan, heat oil over medium heat. Hold an eggplant by the stem and lower into the pan. Fry until each side is golden brown.
- Drain on paper towels. Serve immediately.
This is normally served over rice with a soy sauce dip (or, as some other do, an equal mixture of shrimp paste and white vinegar) or you can just eat it as is.
There’s also another version of eggplant omelette with ground pork included (along with tomato, green bell pepper, onion and garlic). A nice dish as well, but for me this basic recipe does it already.
I know a couple of people who are picky with eggplants but are hooked with this dish.
