A Crowd Pleaser: Milk Chocolate Pecan Pie

At work, I sit beside this girl who’d suddenly decided she wants to undergo detoxification by eating only fruits and vegetable for a week.

So this is what happens when you are, or know someone who is, planning to be on a diet — you start to think of all the decadent sweets you’ll missed out on. Really, not everybody’s like that? Anyway, that’s what happened. I looked up sweets on Pinterest and got very interested in a Forrest Gump Chocolate Tart, which looked so good I wanted to thank whoever made the film that inspired the author of the said blog post. From there on, I decided I’d do something sweet the next time I’m in the kitchen.

So that’s the story. And now, here enters milk chocolate pecan pie. If you’re a fan of pecan pie and wanted something a little bit different, this recipe is perfect for you.

Milk Chocolate Pecan Pie

Servings: 8

 

Ingredients:

  • 1 9-inch pie shell
  • 3 eggs
  • 235 ml light corn syrup
  • 135 g white sugar
  • 75 g butter, melted
  • 110 g pecan halves
  • 85 g milk chocolate chips
  1. Preheat oven to 175 degrees Celsius.
  2. In a medium mixing bowl, beat eggs lightly. Stir in light corn syrup, sugar, and butter. Add pecan and chocolate chips.
  3. Pour filling into the pastry shell. To prevent overbrowning, cover the pie edges with aluminium foil.
  4. Bake for 25 minutes. Remove foil from the crust edges and bake for another 25 minutes, or until knife inserted in the centre comes out clean.
  5. Chill before serving.

 

Best served with a scoop of vanilla ice cream or whipped cream.

For a variation, instead of folding in the chocolate chips, layer them on the bottom of the crust and then pour in the filling. You’d need more chocolate chips to do this, obviously.

Don’t skip putting the foil on the edges, that’s an important step. Also, I don’t have a problem about this recipe being too runny, but if that’s the case, simply add more pecans or make sure that you’re using quality corn syrup.

What I like about this pie: one, is that it’s easy to make, and an easy recipe always scores big on my list, and that it’s sweet but not too sweet, not in an it’s-too-chocolatey kind of a way. At least, you’re not going to think that you’re eating a candy bar, if you know what I mean, and the pecans and the chocolate are just a wonderful combination.
