Hallo summer!
There’s so many things to love about this season: summer dresses, beach vacations (my friends and I are planning to go to Boracay), even the sheer excitement of it all.
Summer also means refreshments and ice creams. Yep, that’s the inner child in me who’s excited about ice creams.
Here’s how I make mint chocolate chip ice cream. You can also do this without an ice cream maker, but I find it easier if you have one. Much more convenient that way, especially if you’re the kind who needs a regular tub of ice cream in the fridge (or, that is to say, you have little nieces who never seem to get tired of ice cream). Besides, ice cream makers come with a recipe booklet that you’ll find useful, especially when it comes to creating your own flavour.
Mint chocolate chip ice cream
Makes 2 litres
Ingredients:
- 480 ml 2% milk
- 480 g heavy cream
- 200 g sugar
- 1/2 tsp salt
- 1 tsp vanilla extract
- 1 tsp peppermint extract
- 1 cup semisweet chocolate chips, finely chopped
- 3 drops green food colouring (optional)
- In a large bowl, stir together the first six ingredients until sugar has dissolved. Add the food colouring.
- Pour the mixture into an ice cream maker and process as per manufacturer’s instruction. After around 10 minutes into the freezing, fold in the chocolate chips.
- After 30 minutes or when mixture has thickened, transfer to a container and freeze for at least 2 hours.
This recipe is good for starters, so as you can see it’s fairly simple. You can amp up the peppermint extract depending on how minty you want the ice cream to be or add or lessen the chocolate chips. If you have shaved chocolate that’s a good substitute as well, as the chocolate really melts in the mouth.
The phrase “let your imagination run wild” is the motto when it comes to making ice cream at home. Try out first the conventional flavours — vanilla, chocolate, strawberry — and move on from there.
I think there are literally hundreds of ice cream recipes that you can try, and honestly I can’t name them all. But to give you an idea, there are some weird and wacky ice cream recipes, and others that you have to discover/experiment with at home, say, grand marnier with dried fruit ice cream, lavender and rosewater ice cream, chocolate-wasabi ice cream, ginger ice cream, and more.
