A Quick Quiche Recipe

What’s not to like about quiche?

It’s both delicious and nutritious, something you can’t say about other foods nowadays. It’s also easy to make, and a bit like stir fry dishes, you can use various veggies — asparagus, broccoli, cauliflower, mushrooms or sun dried tomatoes — or whatever else you have on hand. There’s so many varieties of quiche that you can try, so you won’t get tired of the same thing. You can make it vegan or add some bits of meat such as bacon or ham.

This recipe for bacon and spinach quiche features a crispy, flaky crust, with a tasty mixture that’s nicely set up. It’s perfect for breakfast and, if you have some leftover, for lunch. It’s also easy to tweak to your liking.

Servings: 8

 

Ingredients:

  • 6 large eggs, beaten
  • 360 ml heavy cream
  • Salt and pepper
  • 115 g chopped fresh baby spinach
  • 225 g bacon, cooked and crumbled
  • 170 g shredded Swiss cheese
  • 1 9-inch chilled pie crust, fitted to a 9-inch glass pie plate
  1. Preheat oven to 190 C.
  2. Combine the egg, cream and salt and pepper in a blender. Layer the spinach, bacon and cheese in the bottom of the pie crust. Pour the egg mixture on top.
  3. Bake for 35-45 minutes until the mixture is set.

 

Go easy on the salt, as the bacon will also add saltiness. You can also try adding onion or garlic powder; it makes a difference.

Just a quick note. You don’t have to use all of the exact amounts listed in this recipe especially if you want a lighter quiche. Just sprinkle spinach, bacon and cheese and then pour in some of the egg mixture. The original recipe has so much ingredients to overload a single pie crust, so I decreased the amount of ingredients listed.
